Slovenia Invades Vermont — Buffet-Style

I would be surprised if any other food critic writes more about the cuisine at area universities than I do, but I can't help it. The University of Vermont hosts two of my favorite annual food events.

While it's always exciting to read about the chefs and restaurants nominated for James Beard Foundation Awards, I'm particularly piqued by the bar programs, wine programs and beverage professionals who receive nods from the judges. So it was both wonderful and gratifying to see Steve Wood, the owner of New Hampshire's Poverty Lane Orchards and Farnum Hill Ciders nominated this year as an "Outstanding Wine, Spirits, or Beer Professional" semifinalist.

Though chef de cuisine Jeff Trump will be running the kitchen, Mahe says he's been exceptionally hands-on with the Lobby's menu. That means dishes that please the chef's own palate, such as wild boar ravioli and salad with a coffee-and-molasses duck spring roll.

The cacao cannoli had waited in the case too long and lost its crispness, though I appreciated the cinnamon in its cream. The chocolate torte was classic French, well done.

It's no secret that food sells, especially when it comes to magazines. Yet the striking blueberry pie that appears on the cover of Vermont Law School's Loquitur — as well as the picture of dean Marc Mihaly sautéeing a veggie omelette — promise something different than recipes within. The entire Winter 2013 issue of Loquitur, VLS' alumni magazine, is devoted to food — "Good Food," as the cover promises — as well as the people who work to grow, make and protect it.“We focused this issue of Loquitur on food for several reasons," writes Peter Glenshaw, VLS' director of communications, in an email.
