Update, April 6, 12: 15 p.m. : We have a winner! kawrx76 was the first to correctly identify the Rochester Cafe & General Store. The pictured dishes were a maple chipotle chicken sandwich and a strawberry ice cream sundae with hot fudge. Thanks to everyone who chimed in!

On first bite, we agreed that we had let the bombe burn too long. Since the layer of meringue was so thin, all that remained was a burnt taste and none of the light fluffy happiness of the whipped eggs.

Preheat your oven to 450 degrees and set a rack on the middle rung. Cut a reasonable amount (one scant handful per person) of ham into half-inch cubes; place in a cast-iron skillet with a thin pat of butter and whatever other breakfast meats (crumbled bacon or sausage?)
